Eatin' O The Green

Yes, I know. It is supposed to be "wearin O' the green". Well I'm not Irish, but you know the saying, "everybody's Irish on St. Patrick's Day". So today to celebrate, I baked green cupcakes. My girlfriend told me she saw a cooking show where the chef added a 3oz box of jello gelatin powder to a white cake mix and then proceded as per the box. They turned out great and green! My girlfriend used cool whip as her frosting, as did I (tinted green). Next time though I am going with frosting. Cool whip doesn't really spread very well. Happy St. Patrick's Day everyone.
